Which ones do you use? If you had to start over, what features would you find essential?
I'm writing my own, after years of using other people's apps like Wordpress and Movable Type. I'm putting in what I want for now, but I'm always interested in what other people consider "must-haves". What I'm writing is more like a tumblelog or Twitter, but I'm taking some influences from the regular blogging world as well.

Well are you writing this for yourself or to share? Because I think that would affect the way you program it.
Must haves for me from a user standpoint, are really just the basics...
comment moderation, spam control, scheduling future posts, etc.
From a developer's standpoint, I need it to be easy to theme and hack up with my own functionality. :D

So far, I'm going with WP. I haven't found anything that I would need or want that WP doesn't have. Even if it didn't, writting plugins for it is quite easy.
I'm using Wordpress since January now, and I never regret switching from Serendipity, WP is much more tidy and focussing than S9Y..
I'm using lots of Plugins, so i'll mention just the important ones:
Akismet - Excellent Spam Protection
RSS Comments - Subscribe to Comments
Adsense Deluxe - Best Plugin for AdSense integration
FeedBurner Feed Replacement - Helps to improve your feeds and Reader-Count :-)
enough for now...

I started out rolling my own ( http://www.simplog.org ), but it got too bloated and hard to maintain, so I'm in the process of switching to Drupal (http://www.drupal.org).

I use WordPress. Although I find Movable Type to be awesome too, but WordPress is my main man. :) It's got (almost) everything I could want.

Are you still thinking of writing your own?

I use WordPress for both my blogs. So far, I've found it easy to use and easy on the eyes.

Yeah but I'm really limiting its scope and probably won't do a general release of anything.
